Summary

Forms part of a group of images documenting John and Joe's Meat Market.
He cut all the meat away from around this tendon, and let the bulk of the beef, which was very heavy, hang there by this single tendon to demonstrate its function. He then ceremoniously cut the tendon, and the beef fell away (he'd hooked the beef to prevent it from falling on the floor).
