Hams now aged in 6 to 10 weeks. College Park, Md. Oct. 27. No longer is it necessary to age ham a year or so to obtain that sharp, pungent, cheesy flavor in the lean meat, so characteristic of southern style ham. Speeding up nature, the Maryland Experiment Station, University of Maryland, in cooperation with the U.S. Department of Agriculture, has developed a process by which it is possible to produce some of these characterisitc flavors in hams in relatively short time--6 to 10 weeks--by holding them at temperatures from 107 F to 125 F in specially constructed incubator. 1. The first step in the process is the thorough curing of the hams, three days being allowed for each pound of ham being cured. Mr. F.D. In the future if your chicken, whether it's fried a la Maryland, baked or prepared any other style, is more succulent and of better flavor credit will be due the experts at Uncle Sam's Department of Agriculture experimental farm here. They are striving daily to breed a superior type of bird, superior in meat quality, egg production and growth. During the experiments a careful check is kept on each egg from the time it leaves the nest until it hatches a baby chick. The egg is numbered to correspond wit the one on the leg band of the hen; then a daily record is kept of both the dam and the sire until the fourth generation, 1/19/38. Virginia style ham. [...] did Mrs. Mark Bristol. [...]ze when she baked Virginia style. a couple of hams for friends a few years ago that would eventually develop into a lucrative business for her. The flavor of the hams so intrigued the friends that they passed the word on to others and as a result Mrs. Bristol now bakes thousands of hams every year in her kitchen on fashionable Massachusetts Avenue and ship them to all parts of the world. Even the Duke of Windsor is now one of her best customers. It takes Mrs. Bristol four days to prepare a ham according to her specially formulate recipe. It is first soaked and simmered for days and then while baking, it is sprinkled with cloves, pineapple and basted with sherry, brandy or applejack. The hams are originally obtained from a special farm in Virginia where they have been smoked in the real Dixie manner. Mrs. Bristol frequently inspects the ham while is it in the simmering process. Her Virginia cook and first assistant, Mamie, holds the lid
