Recognized in all countries as one of the greatest living authorities on world weather, Dr. Arctowski is continuing his studies in efforts to find relationships between solar conditions and rainfall, barometric pressure, etc., at various places on Earth. U.S. expert on crop insurance. Washington, D.C., Sept. 21. Considered by agriculture leaders to be the nation's foremost authority on crop insurance, Roy M. Green is now in charge of Division of Agriculture Finance, U.S. Department of Agriculture. 48 years old, Green is a Native of Missouri and a graduate of the U. of Missouri. After teaching Agriculture Economics at his alma mater for a few years he transferred to the Kansas State Agriculture College at Manhattan, Kans., to teach the same subject. In 1934 he was named Vice-President of the Production Credit Corporation at Wichita, a branch of the Farm Credit Administration. Note to housewives: your turkey- baking troubles will be over and the bird you serve for dinner this yuletide will be tender, juicy and flavorsome if you follow the method used by the expert cooks at the Bureau of Economics, U.S. Department of Agriculture. Continual testing and experimenting with various recipes has taught Uncle Sam's cooks that many a prize bird has become a "ham" when improperly prepared. The best recipe - so far discovered by the Bureau of Economics - is demonstrated in the following set of pictures, made under the supervision of Miss Lucy Alexander, Chief Cooking Specialist. Miss Alexander, a graduate of Vassar and the University of Illinois, has been on her present job for eleven years. Method for preserving sweet cream indefinitely discovered by Government expert. Washington, D.C., Jan. 26. Dairymen the world over will benefit from a method discovered by Owen E. Williams, of the Bureau of Dairy Industry, U.S. Department of Agriculture, whereby sweet cream can be preserved indefinitely in sodium chloride, common table salt. To 100 pounds of cream testing 40 per cent butterfat, 7 pounds of salt are added. When the cream is to be delivered once a week from the farm to the creamery, enough salt is placed in the cream jar at the beginning of the week to preserve the week's supply. As more cream is added after each milking, it must be carefully mixed with the salt solution already in the jar. The salt prevents souring and acts as an anti-freeze. To remove the salt, Williams dilutes the thick cream with fresh skim milk and runs the mixture through an ordinary cream separator. The cream may then be used as coffee cream or it may be used in the manufacture of sweet cream butter or in the manufacture of ice cream. 1. Mr. Williams weighs out 7 pounds of sodium chloride - common table salt - which is sufficient to preserve 100 pounds of 40 per cent cream, 1/26/39
